Apparently I'm the last to find out that lemon balm (and the whole mint family) is an aggressive grower that shouldn't be planted with other things. So in addition to replanting it, I have the opportunity to make a bunch of lemon balm cocktails, tea, and oil (apparently it aids anxiety and insomnia). Here's my first attempt, in a mojito fashion with muddled leaves, Opihr gin, and Velvet Falernum (I was reaching for simple syrup and grabbed it by mistake and realized it's a genius upgrade with its warm, spiced kick). The Velvet Falernum adds enough spice depth that I should be able to swap out the Opihr gin in later attempts with Beefeater or another more straightforward gin label.
